Shrimp ceviche is a Colombian dish made by marinating leftover cooked shrimp in orange and lemon juice, then tossing it with red onion, tomato and fresh coriander — no cooking required. It travels well in a lunchbox and is served cold at brunch.

Mix the orange juice, lemon juice and salt and pour over the shrimp.
Add the thinly sliced red onion, diced tomato, fresh coriander and chili to the shrimp and stir together.
Chill in the refrigerator for at least 20 minutes and serve cold.
Do not chop the shrimp too small, since they will shrink further during marinating and can turn mushy. Removing the chili's seeds tones down the heat; leave them in for a sharper bite. Allergens: contains shellfish (shrimp).
If you use fresh shrimp instead, you will need to boil and cool it first; this adds about 10 minutes to the preparation time in that case.
