Remove the compote from the heat and let it cool at room temperature, then rest it in the refrigerator for at least 2 hours; the flavor becomes more pronounced once fully chilled.
Divide the compote among bowls with the apricots and serve cold, sprinkled with crushed walnuts on top if you like.
Important: Soaking the apricots in warm water for 30 minutes before blanching speeds up softening. If served with nuts, this should be noted separately for those with nut allergies.
Putting the compote's liquid in the fridge to chill thoroughly at least a few hours before serving noticeably enhances its flavor.
