This compote is made by pressure-cooking dried apricots with a cinnamon stick, relying entirely on the fruit's own natural sweetness with nothing added. Using a pressure cooker shortens what is normally a long soak-and-simmer process, turning a low-calorie dessert into something that packs easily into a lunchbox.

How to make it?

Prepare the apricots

Rinse the dried apricots under cold water.

Load the pressure cooker

Put the apricots, water, cinnamon stick, cloves and lemon zest in the pressure cooker and close the lid.

Cook

15 min

Once the cooker starts to whistle over high heat, cook for 15 minutes over low heat, then remove from the heat and let the steam release naturally.

Chill and serve

15 min

Open the lid, strain out the cinnamon stick and cloves, and chill in the refrigerator before serving.

Reminder

Never force the pressure release valve open, wait for the steam to escape on its own; otherwise the hot compote can splash out.

Düdüklüde 15 dakika pişirin diyor ama benim kayısılarım daha sertti, 15 dakikanın sonunda hâlâ diriydi; bir 5 dakika daha kısık ateşte tutmam gerekti, yoksa kompostonun kıvamı istediğim gibi olmayacaktı.
