This recipe, made by briefly grilling mullet — frequently caught along the Aegean and Marmara coasts — and serving it with a garlicky thyme sauce, is an economical and simple grilled fish option. It can be quickly prepared for everyday tables.

How to make it?

Prepare the fish

Rub the cleaned gray mullet with olive oil, crushed garlic, thyme, salt and black pepper.

Cook the fish on the hot grill, turning both sides, until the flesh flakes easily with a fork.

Combine with the sauce

Drizzle lemon juice over the cooked fish.

Serve hot with lemon slices.

Reminder

Important: Grey mullet must be scaled and gutted thoroughly, or an unpleasant smell can develop on the grill. Allergen: contains fish only. Caution: if the grill grate isn't heated thoroughly beforehand, the fish's skin can stick and tear.

If you place a few lemon slices and a thyme sprig inside the red mullet's belly before putting it on the grill, it gets aromatized from the inside as it cooks.
