Knead the desalted cheese with semolina, flour, egg, and baking powder into a smooth dough.
Shape walnut-sized balls from the dough and arrange on a parchment-lined tray; bake in a preheated oven until golden.
Boil the sugar, water, and lemon juice, boil for a few minutes, then remove from heat.
Drop the hot balls straight from the oven into the cold syrup and let sit for a few minutes so they soak it up.
Allergen: contains dairy/cheese, wheat flour (gluten), and egg. Important: Always soak the cheese in plenty of water beforehand to remove the salt; a dessert made with cheese that hasn't been fully desalted turns out too salty and also won't absorb the syrup properly.
