A dessert from the Bursa region made by kneading unsalted fresh cheese with semolina and dough, baking it into small balls, then dipping it in cold syrup. Its mild cheese flavor and syrupy texture offer a distinctive dessert experience.

Step by Step

How to make it?

1

Knead the dough

15 min

Knead the desalted cheese with semolina, flour, egg, and baking powder into a smooth dough.

2

Shape the balls and bake

25 min

Shape walnut-sized balls from the dough and arrange on a parchment-lined tray; bake in a preheated oven until golden.

3

Prepare the syrup

10 min

Boil the sugar, water, and lemon juice, boil for a few minutes, then remove from heat.

4

Dip the hot balls in syrup

10 min

Drop the hot balls straight from the oven into the cold syrup and let sit for a few minutes so they soak it up.

Reminder

Allergen: contains dairy/cheese, wheat flour (gluten), and egg. Important: Always soak the cheese in plenty of water beforehand to remove the salt; a dessert made with cheese that hasn't been fully desalted turns out too salty and also won't absorb the syrup properly.

Editor's Note Editörün Notu

If you lightly dampen your palms while shaping the balls, you get a smooth surface without the dough sticking to your hands.
