A vegetarian, oven-baked snack made by blending boiled quinoa with grated vegetables and egg and shaping into small balls. With its light texture and spiced filling, it can be served as either an appetizer or a snack.

How to make it?

Prepare the filling

Mix the boiled and cooled quinoa well with grated carrot, zucchini, onion, egg, flour, parsley, cumin, and salt in a bowl.

Let it rest

15 min

Cover the mixture and rest it in the refrigerator; during this time the mixture firms up to a consistency ready for shaping.

Shape the meatballs

10 min

Rub a little olive oil on your hands, take walnut-sized pieces from the mixture, shape into flat patties, and arrange on a baking sheet lined with parchment paper.

Bake in the oven

25 min

Brush the tops of the patties with olive oil and bake in a preheated oven until cooked through and the surfaces are lightly browned, turning once halfway through.

Reminder

Important: Don't add the quinoa to the mixture without draining and cooling it thoroughly after cooking, otherwise the patties may fall apart. Squeeze the water out of the grated vegetables. Allergen: Contains egg and gluten.

If you rest the mixture in the refrigerator for 15 minutes before shaping, the patties keep their form in the oven without falling apart.
