A light and modern alternative to traditional pilaf, in which quinoa comes together with colorful vegetables. With its high fiber content, this pilaf feels both filling and light, offering a practical option for everyday tables.
Heat the olive oil in a pot and add the onion, zucchini, and red pepper, sautéing until softened.
Add the rinsed quinoa and sauté, stirring, for 2 minutes.
Add hot vegetable stock and salt and bring to a boil; cook over low heat with the lid closed until the water is absorbed.
Remove from heat and let rest for 8-10 minutes, then fluff with a fork and serve.
Important: Rinsing the quinoa thoroughly with water before cooking removes its natural bitter coating (saponin). Contains no allergen.
Cooking the quinoa in vegetable stock gives the grains a fuller aroma.
