A vegan köfte requiring no cooking, made by boiling red lentils and fine bulgur together and kneading them with an onion-tomato paste mixture. Wrapped in lettuce leaves, it's served fresh with lemon and pomegranate molasses as a meze or snack.

How to make it?

Boil the lentils

Boil the red lentils in plenty of water until soft, then drain.

Add the bulgur

10 min

Sprinkle fine bulgur over the hot lentils, cover the pot, and let it rest for 10 minutes to steam.

Prepare the sauce

5 min

Sauté the onion in olive oil until it turns pink, then add tomato paste, cumin, and red pepper flakes and cook for a few more minutes.

Knead the mixture

10 min

Add the sautéed tomato-paste sauce, spring onion, and parsley to the steamed lentil-bulgur mixture and knead thoroughly with your hands.

Shape and serve

10 min

Shape small finger-sized köfte from the mixture in the palm of your hand and wrap in lettuce leaves; drizzle with pomegranate molasses and serve.

Reminder

Important: After boiling the lentils and bulgur, let them cool before kneading — the hot mixture can burn your hands. Caution: Take care not to burn the tomato paste while sautéing it, or it will leave a bitter taste.

If you work the mixture with hands moistened with cold water a few times while kneading, the meatballs both look glossier and take shape more easily.
