Add the ground meat and cook over medium heat until it releases its liquid and it evaporates.
Add the chopped tomato and cook for a few more minutes, then add salt and black pepper.
Crack the eggs over the sauté and cook over low heat until they reach your desired consistency. Caution: stirring too much will break up and scramble the eggs.
Important: Sauté the ground meat until it releases and reabsorbs its juices, otherwise the pan will stay watery and the eggs won't cook properly. Turn the heat to low right after cracking the eggs. Allergen: contains egg.
Adding a pinch of cumin while browning the ground meat adds depth to the pan; serving it with plenty of parsley-topped bread completes the classic flavor.
