Boil the cranberries
15 minPut the cranberries in a pot with water and boil over medium heat until their skins crack.
A fruit juice known for its sharp tartness, made by boiling cornelian cherry fruit with sugar and straining it. It can be served hot in winter or chilled with ice in summer.
Put the cranberries in a pot with water and boil over medium heat until their skins crack.
Lightly mash the cranberries with the back of a spoon to release their juice fully, then strain and separate the pulp.
Add sugar to the strained liquid little by little, tasting as you go, and stir; warm gently until the sugar dissolves.
You can serve it hot, or chill it in the refrigerator and serve with plenty of ice.
Note: Since cranberries are quite sour, add sugar gradually to taste; adding too much sugar at once can spoil the flavor.
