A practical everyday dish of Iraqi cooking, köfte yahnisi is made by simmering cumin- and allspice-scented ground beef meatballs in a tomato sauce in a pressure cooker for a short time. It is a regular on daily tables, served with rice or bread.
Knead the ground beef with grated onion, crushed garlic, cumin, allspice, black pepper, parsley and salt, then shape into meatballs about 4 cm in diameter.
Heat the vegetable oil in the pressure cooker and sear the meatballs, turning them, for 5 minutes until lightly coloured on all sides.
Add the tomato, tomato paste and water, close the lid of the pressure cooker and cook on low heat for 10 minutes from the point it starts hissing, then let the pressure release naturally.
Do not stir the meatballs too much while searing them, or they will fall apart; turning them once on each side is enough. Always let the pressure release naturally, without forcing the lid open.
If you do not have a pressure cooker, you can cook the same meatballs in a regular covered pot over low heat for 25 minutes.
