Papaya softens quickly in the pressure cooker with cinnamon, cloves and ginger to make this dessert, part of Colombian tables' tradition of spiced fruit. Pressure cooking lets the fruit turn meltingly soft without a long simmer.

How to make it?

Prepare the papaya

Peel the papaya, remove the seeds and cut it into cubes.

Pressure-cook it

15 min

Put the papaya in the pressure cooker with the cinnamon stick, cloves, ginger, sugar, lemon juice and water; close the lid and, once it starts hissing, lower the heat and cook for 15 minutes.

Let the steam release

10 min

After turning off the heat, leave the cooker sealed for 10 minutes so the steam releases naturally.

Thicken the syrup

10 min

Once open, transfer the papaya to a bowl and simmer the remaining syrup over low heat for 10 minutes to thicken it, then pour it over the papaya.

Reminder

Clean out the papaya seeds thoroughly when cutting it, since leftover seeds leave a bitter taste. If the syrup seems too thick on the stove, remember it will firm up even more as it cools.

Papayayı tohumlarından tam temizlemediğim için kompostoda hafif acımsı bir tat kaldı, ilk lokmada fark edince biraz hayal kırıklığına uğradım. Düdüklüdeki 15 dakika kıvamı gayet iyiydi ama bu detayı atlamak tadı bozdu.
