This drink is made by steeping coarsely ground coffee in cold water for hours, which keeps acidity low and gives a naturally smooth flavour since it is never heated. Made without any added sweetener, the coffee's own natural notes come through. Lengthened with ice or milk, it suits a late-night snack or a brunch table.

How to make it?

Prepare the coffee

Grind the coffee beans coarse and gritty; a fine grind leaves the drink cloudy once strained.

Combine with water

Put the ground coffee in a glass jar, pour the cold water over it, stir and close the lid.

Steep in the fridge

Leave the jar in the fridge overnight; the coffee slowly releases its colour and flavour into the water.

Strain and serve

Strain the mixture through a fine sieve or coffee filter, pour over ice and lengthen with milk if you like before serving.

Reminder

If the coffee is ground too fine, the grounds slip through the filter and cloud the drink — a coarse grind is essential. Allergens: contains milk and dairy if the optional milk is added.
