Kousa mahshi is a hearty Syrian dish made by hollowing out zucchini, stuffing them with a spiced meat and rice filling, and simmering them in tomato-flavoured water for a long time. It keeps its flavour once cooled, making it easy to pack and carry.

How to make it?

Hollow out the zucchini

Carefully hollow out the middle-sized zucchini with a corer, taking care not to pierce the skin.

Prepare the filling and stuff

20 min

Mix the ground beef with the rinsed rice, grated tomato and salt, and fill the zucchini about two-thirds full.

Simmer in the sauce

45 min

Arrange the stuffed zucchini in a wide pot, pour over water mixed with the crushed tomato, crushed garlic and olive oil, cover and simmer over low heat for 45 minutes.

Serve with mint

Sprinkle the cooked zucchini with dried mint and serve hot.

Reminder

Be careful not to pierce the skin while hollowing out the zucchini; water seeping through a torn skin thins the filling and can make the dolma fall apart.
