Lightly dust the thinly sliced lamb liver with flour.
Sauté the onion in the oil for 5 minutes until softened, then set aside on a plate.
Sauté the liver in the same pan over high heat for 4 minutes until lightly browned on each side.
Toss the sautéed onion and chilli flakes with the liver, adjust the salt, and serve hot with whole wheat bread.
Cook the liver for just 4-5 minutes; overcooking toughens it and dries it out completely. Allergens: contains wheat (gluten).
Trimming away membrane and vein remnants while slicing the liver noticeably improves both texture and appearance.
