Let the seasoned slices rest for 15 minutes; this lets the spices soak into the meat.
Place the slices over hot coals and grill quickly, 3 minutes per side for 6 minutes total; do not overcook or it will toughen.
Squeeze lemon over it while still hot and serve immediately.
Do not overcook the spleen; past 6 minutes it turns rubbery. Do not cut the marinating time short — the spices need at least 15 minutes to soak in.
