Lemper is an Indonesian classic made by filling sticky rice cooked in coconut milk with shredded chicken and wrapping it in banana leaf. The leaf both shapes the roll and lends a subtle aroma as it steams.

How to make it?

Cook the rice

Cook the glutinous rice with the coconut milk and salt over low heat for 15 minutes until the liquid is absorbed.

Prepare the filling

10 min

Sauté the crushed garlic and chopped onion, add the shredded chicken breast and ground coriander, and cook for a few more minutes.

Wrap

20 min

Spread a handful of rice on a cleaned banana leaf, place the chicken filling in the centre, roll tightly into a cylinder and secure the ends with toothpicks.

Steam

15 min

Steam the wrapped rolls for another 15 minutes and serve warm or at room temperature.

Reminder

Pass the banana leaf briefly over an open flame before wrapping; the warmed leaf becomes pliable and wraps without cracking.
