Made by first boiling and peeling beef tongue, then cubing and grilling it over charcoal, this Lebanese dish is served with garlicky toum sauce on the side. The preparation takes time, but the smoky char makes it worthwhile.
Simmer the beef tongue with the bay leaves and onion for 2 hours over low heat, until a fork slides in easily.
Peel the hot tongue and let it cool, then cut it into thick slices once cooled.
Marinate the slices with olive oil, sumac, lemon juice and salt for 10 minutes, then thread them onto skewers.
Blend the garlic with the vegetable oil until it forms a thick, smooth toum sauce. Grill the skewers over charcoal for 8 minutes total, 4 minutes per side, and serve with the toum sauce.
Let the tongue cool completely after peeling before slicing it; cutting it while still warm will shred the fibres.
Dilimleri sıcakken kesmeye kalktım, tarifte soğutmadan kesmeyin uyarısı olmasına rağmen acele ettim ve dilimler lifleri dağılarak parçalandı. İkinci seferinde tam soğuttum, kesim çok daha temiz oldu.
Dili haşlamak tam 2 saat sürmedi bende, 1 saat 40 dakikada çatal rahatça battı; sanırım dilin boyutuna göre değişiyor. Soyma işlemi düşündüğümden kolaydı, sıcakken kabuk kolayca çıktı.
Toum sosunu robotla çekerken önce ayrıştı, sonunda sıvı yağ yerine yarı yarıya zeytinyağı kullanınca toparlandı. Sumak yerine biraz nar ekşisi de denedim, ekşiliği daha belirgin oldu.
Toum ayrışması yağı çok hızlı eklemekten olur, ince bir sızıntı halinde eklemek daha güvenli. Nar ekşisi denemenizi de not aldım, farklı bir profil için iyi bir alternatif.
