Malaysian spiced tripe soup is a hearty brunch dish made by simmering leftover boiled tripe from a previous meal with ginger, chili and coconut milk for a long time. Keeping the heat low is necessary for the soup to thicken properly.

Prepare the tripe

Slice the boiled tripe into thin strips.

Sauté the onion, ginger and red chili over medium heat for 8 minutes.

Simmer

Add the tripe strips and coconut milk, then simmer over low heat for 75 minutes.

Reminder

Keep the soup at a gentle simmer, or a hard boil may split the coconut milk. Slice the tripe into thin strips, or thicker pieces will not soften at the same rate as the other ingredients.
