Marinated anchovies are a Greek dish made by curing fresh anchovy fillets in a mixture of lemon juice, apple cider vinegar and olive oil, with no heat involved at any stage. Since it needs no cooking, it can be packed in a lunchbox and eaten as a snack.

How to make it?

Prepare the anchovies

Rinse the cleaned anchovy fillets under cold water and pat them dry with paper towel.

Make the marinade

Mix together the lemon juice, apple cider vinegar, olive oil, thinly sliced garlic, salt, black pepper and oregano.

Marinate

90 min

Coat the anchovy fillets in the marinade and refrigerate for at least 90 minutes, until the flesh turns opaque white.

Serve

5 min

Drain the marinated anchovies from the liquid and serve cold.

Reminder

Make sure the marinade fully covers the anchovies, since any exposed parts will not cure evenly. If the marinating time is too short, the centre of the fish can stay raw, so be sure to wait at least 90 minutes. Allergens: contains fish (anchovy).

You can try the same method with sardine fillets instead of anchovy; since sardines are meatier, you will need to extend the marinating time by about 30 minutes.
