Sauté the chopped onion in butter over medium heat until softened and lightly colored.
Add the drained mung beans to the pot and sauté with red pepper flakes, cumin and salt for 10 minutes.
Transfer the sauté to a serving plate and place yogurt alongside. Melt butter in a small pan, mix in red pepper flakes and drizzle over the top.
Important: Drain the mung beans well after boiling, otherwise they'll release water in the pan and end up with a boiled consistency instead of sautéed. Caution: Since butter can burn quickly over high heat, take care to sauté over medium heat.
If you drizzle a spoonful of yogurt and red pepper flakes in sizzling butter on top, you get a classic kavurma presentation.
