Important: Add the lemon balm leaves to water that has been taken off the heat and rested a few seconds, not to boiling water; prolonged boiling drives off the aroma. Those on regular medication (especially thyroid or sedative medications) are advised to consult their doctor before consuming.
To keep the tea from turning bitter, don't leave the lemon balm leaves in water for more than 5-7 minutes. If you'd like to sweeten it, you can add a dessertspoon of honey when serving.
