A staple across Saudi tables, this lentil stew cooks red lentils with onion and garlic browned in cumin and chilli flakes in a pressure cooker, finished with a squeeze of lemon. It is a spiced, heart-friendly main.

How to make it?

Sauté the onion and garlic

Sauté the onion in the olive oil until translucent, add the garlic and cook one more minute.

Add the paste and spices

Stir in the tomato paste, cumin and chilli flakes and cook until fragrant.

Cook the lentils

Add the red lentils, salt and water, seal the pressure cooker, and once it comes up to pressure cook on low for 15 minutes.

Finish and serve

Once the pressure has released, open the lid and blend briefly if you want it smoother. Squeeze lemon over the top and serve hot.

Reminder

If you do not brown the tomato paste properly before adding the lentils, the stew tastes raw. Letting the pressure release naturally before opening the lid keeps the lentils from breaking apart.

Düdüklü tencerede mercimekleri kapak kapandıktan sonra 12 dakika pişirdim, kimyonun kokusu mutfağa hemen yayıldı. Sarımsağı biraz fazla kullandım ama limonla dengeledim, ailece beğendik ve ertesi gün soğuk kalanını bile bitirdik.
