Slightly underripe bananas are simmered slowly in brown sugar and water until they turn tender in a thick caramel syrup. A breakfast classic on Filipino tables, it is also served warm or cold as a mid-morning treat.

Bring the brown sugar, water and cinnamon stick to the boil in a wide pan.
Add the bananas to the syrup and simmer over low heat, turning occasionally, for 25 minutes until the syrup thickens and the bananas soften.
Remove the pan from the heat and let it cool for at least 1 hour, then peel and serve.
Cooking the bananas with their skins on keeps their shape and traps the flavour inside; only peel them just before serving. If the syrup gets too thick, add another spoonful of water.
Ground cinnamon can replace the stick, but it does not give as clean an aroma.
