A staple of Australian kids' parties, these mini pies are made by thickening lean beef mince in a tomato sauce base and wrapping it in puff pastry. Cooking them in the air fryer with little oil makes for a lighter dish that's also easy for children to eat.
Brown the lean mince with the onion, then add the tomato sauce, hot stock, salt and pepper and cook for 10 minutes; loosen the cornstarch with cold water and stir it in to thicken.
Take the filling off the heat and let it cool for 10 minutes before filling the cases.
Line mini muffin tins with the puff pastry, fill with the cooled mixture, then top with a pastry lid.
Cook the pies in a preheated air fryer basket at 200°C for 15 minutes until the tops turn deep golden; if you don't have an air fryer, you can bake them in a preheated oven at the same temperature for a similar time.
Filling the cases while the mixture is still hot starts to melt the pastry and leaves the base doughy once baked; always let the filling cool first. If you don't have an air fryer, you can bake them in a preheated oven at 200°C for a similar time. Allergens: contains wheat (gluten), milk and dairy.
Loosening the cornstarch with a few spoons of cold water first, instead of adding it straight to the hot filling, lets the mixture thicken without clumping.
