Boil the beans

Soaked dried fava beans are boiled until soft and mashed with olive oil, garlic and lemon to make this dish, a simple but filling classic of Cairo tables. Served cold, it is a calm example of the olive-oil tradition.

Mash the boiled beans with the onion, garlic, olive oil, lemon juice, cumin and salt, using a fork or blender.
Spread the dip on a plate, scatter parsley on top and serve at room temperature.
Skimming off the foam while boiling the beans gives the mash a cleaner colour. If you serve it before it has fully cooled, the texture can look runnier than it really is.
