Soaked dried fava beans are boiled until soft and mashed with olive oil, garlic and lemon to make this dish, a simple but filling classic of Cairo tables. Served cold, it is a calm example of the olive-oil tradition.

How to make it?

Boil the beans

Drain the soaked fava beans and put them in a pot with fresh water; once boiling, lower the heat and cook for 25 minutes, until fully soft.

Mash and mix

10 min

Mash the boiled beans with the onion, garlic, olive oil, lemon juice, cumin and salt, using a fork or blender.

Serve with parsley

5 min

Spread the dip on a plate, scatter parsley on top and serve at room temperature.

Reminder

Skimming off the foam while boiling the beans gives the mash a cleaner colour. If you serve it before it has fully cooled, the texture can look runnier than it really is.

Kuru bakla bulamadığım için yerine kuru bezelye kullandım, kıvamı biraz daha pürüzlü oldu ama tadı fena değildi. Haşlama süresini de 25 dakikadan 35 dakikaya çıkarmam gerekti çünkü bezelye daha geç yumuşuyor.

Bezelye gerçekten iyi bir alternatif, sadece pürüzsüzlük için blenderdan biraz daha uzun geçirmenizi öneririm. Süreyi uzatmanız da doğru bir sezgiydi, kabuklu bezelye baklaya göre daha dirençlidir.
