Mora jam is a rich preserve made by simmering the Colombian Andean blackberry with sugar for a long time and straining it into a thick, seedless spread. The long simmering and straining steps bring the jam to a consistency thick enough to hold on a spoon.

How to make it?

Prepare the blackberries

Pick over and wash the blackberries, then roughly mash them.

Simmer

45 min

Simmer the mashed blackberries with the sugar and lemon juice over low heat, stirring constantly, for 45 minutes until the mixture thickens.

Strain and reduce

15 min

Push the mixture through a fine sieve to remove the seeds, then return the strained purée to the pot and reduce for 15 more minutes.

Jar it

30 min

Fill the jam into jars and let it cool.

Reminder

When straining the mixture, press it well with the back of a spoon to extract all the liquid, or the jam will stay too runny. Stir often while simmering so it does not catch on the bottom.

If you cannot find blackberries, blueberries make a similar jam; the colour will be a deeper purple but the texture stays the same.

Reçeli 45 dakika kaynattım ama hâlâ sulu kaldı, süzme aşamasını atlarsam olur mu yoksa mutlaka gerekiyor mu? Bu kadar uzun sürmesi normal mi acaba, yoksa bir şey mi yanlış yaptım?
