Sekanjabin, a classic Persian cooling syrup made by simmering vinegar, sugar and mint, is drizzled over seasonal fruit here. The sweet-sour balance lifts the fruit's natural flavour rather than masking it.

Step by Step

How to make it?

1

Prepare the fruit

3 min

Dice the watermelon and halve the grapes, then place them in a bowl.

2

Simmer the syrup

8 min

Bring the apple cider vinegar, sugar and water to a boil, simmer for 8 minutes until it lightly coats the back of a spoon, then stir in the fresh mint.

3

Combine with the fruit

2 min

Strain the cooled syrup and drizzle it over the watermelon and grapes, then serve right away.

Reminder

Always let the syrup cool to room temperature before pouring it over the fruit, or the heat will soften the fruit. This recipe contains no known allergens.

Editor's Note Editörün Notu

Judging the syrup's thickness is the tricky part; simmer just until it lightly coats the back of a spoon, or it will set too firm.
