Heat the olive oil in a pan and sauté the finely chopped garlic over medium heat until fragrant. Add the strained tomatoes, sugar, and salt, and cook for 10 minutes until the sauce thickens slightly.
Add the drained pasta into the sauce, add some of the reserved cooking water, and toss together. Before removing from heat, add fresh basil leaves and stir, then serve hot.
Important: Boiling the pasta al dente in plenty of salted water lets it carry the sauce's flavor. Contains gluten. If you add the pasta before the sauce thickens too much and combine it with a ladle of pasta water, the sauce will coat the pasta beautifully.
Adding a ladleful of the starchy cooking water to the sauce lets it cling to the pasta with a velvety texture. At serving time, you can optionally add grated parmesan; this addition makes the recipe vegetarian.
