Load the pressure cooker

Nasi uduk is Indonesia's celebration rice, cooked in a pressure cooker with coconut milk, lemongrass and bay leaves until every grain is fragrant. Entirely dairy-free, it takes centre stage at large festive gatherings.
Put the rinsed rice, coconut milk, water, lemongrass, bay leaves, garlic and salt into the pressure cooker and stir together.
Seal the lid, bring to pressure over high heat, then lower the heat and cook for 12 minutes. Turn off the heat and let the pressure release naturally.
Once the pressure has fully released, open the lid and remove the lemongrass and bay leaves. Fluff the rice with a fork and let it rest, lid ajar, for 5 minutes.
Do not open the pressure cooker until the pressure has fully released, or the rice will fall apart. Keep stirring as you add the coconut milk, or it will catch on the bottom of the pot. Allergens: this recipe contains none of the main allergen groups.
If you cannot find lemongrass, a strip of lemon zest gives a similar freshness; just be sure to remove it before serving.
