Boil the chickpeas

A classic cold-served olive oil dish, chickpea pilaki is made by lightly sautéing boiled chickpeas with carrot, potato and onion in olive oil and letting them rest in a lemony dressing. Keeping for a few days in the fridge and weeks in the freezer, it makes a light, filling snack.
Boil the soaked chickpeas in plenty of water for 60 minutes, until soft.
Dice the carrot, potato and onion and sauté them in the olive oil for 10 minutes.
Add the boiled chickpeas along with the granulated sugar, salt and a little water, and cook for another 10 minutes.
Remove from the heat and drizzle with the lemon juice, let it rest at room temperature for 15 minutes, then chill and serve.
Add the salt to the chickpeas at the end, salting too early toughens the skins and slows softening.

Patatesi çıkarıp yerine tatlı patates kullandım, hem rengi daha canlı oldu hem de tatlımsı bir denge yakaladı, havuçla da güzel uyum sağladı. Zeytinyağını biraz artırdım, daha doygun bir doku aldı.
Nohudu bir gece ıslatmayı unuttuysam ne yapabilirim, konserve nohutla da olur mu diye merak ediyorum ama tarifte bu seçenekten hiç bahsedilmemiş, biraz kafam karıştı, cevap yazan olursa çok sevinirim.
