Sauté the onion
5 minHeat the olive oil and sauté the finely chopped onion until lightly pink.
One of winter's light and nourishing olive-oil dishes, made by cooking spinach together with chickpeas in olive oil. Served cold it comes to the table as a meze, served hot as a main dish.
Heat the olive oil and sauté the finely chopped onion until lightly pink.
Add the tomato paste and sauté briefly, then add the boiled chickpeas and stir for a few minutes.
Add the washed spinach to the pot, add a little water and salt, cover with a lid, and cook over low heat until the spinach softens.
Important: Don't overcook the spinach — add it at the last stage and boil briefly to preserve its color and nutritional value. Contains no allergen.
If you add a few drops of lemon juice to the dish, the olive-oil flavor becomes fresher.
