Ojja is Tunisia's classic brunch dish, made by sautéing roasted pepper and tomato with harissa and cracking eggs directly into the sauce. Getting the eggs to the right doneness is the trickiest part of the recipe.

How to make it?

Prepare the sauce

Sauté the chopped tomato, roasted pepper and crushed garlic cloves in olive oil with the harissa for 15 minutes until it thickens.

Cook the eggs

10 min

Lower the heat, crack the eggs directly onto the sauce, and cook for 10 minutes until the whites have set and the yolks are still runny.

Garnish and serve

5 min

Sprinkle chopped parsley over the top and serve immediately while hot.

Reminder

Turn the heat down as soon as you crack in the eggs; on high heat the yolks firm up quickly. Leftover roasted peppers are ideal for this recipe. Allergens: contains egg.

Yumurtaları kırdıktan sonra ocağı kısmayı unuttum, sarılar tamamen katılaştı; tarifte yazan 10 dakika yerine 6 dakikada almam gerekirmiş. Yine de tadı güzeldi, bir dahakine ocağı erken kısacağım.
