A staple of everyday Uzbek breakfasts, tuxum qovurdoq is made by cracking eggs over a sautéed base of onion, pepper and tomato. It's a practical way to use up vegetables left in the fridge and is enjoyed straight from the pan, spoonful by spoonful.

Melt the butter over medium heat, add the onion and red pepper, and sauté for 5 minutes until soft and lightly coloured.
Add the grated tomato to the pan and simmer over low heat for 7 minutes until it releases its juice and thickens.
Crack the eggs directly into the pan, season with salt and black pepper, and cook without stirring for 5 minutes until the whites set and the yolks stay runny.
Once you crack in the eggs, avoid stirring too much — the white should set while the yolk stays creamy. Allergens: contains egg and dairy (butter).
You can fold in leftover courgette or aubergine too — tuxum qovurdoq is essentially the Uzbek way of clearing out the fridge.
