Uzbekistan's small dumpling, chuchvara, is made by wrapping thin dough around a spiced meat filling and boiling the pieces like little parcels. Unlike Turkish mantı, each one is sealed as a small individual packet and served in its own broth.
Knead the flour, egg, water and salt into a firm dough, cover and rest for 20 minutes.
Mix the minced meat with the grated onion, cumin and black pepper.
Roll the dough thin and cut into 4 cm squares, place a little filling in the centre of each and pinch the corners together to seal into small parcels.
Boil the chuchvara in simmering water for 12 minutes, drain, and serve topped with yoghurt.
Don't cut the dough squares larger than 4 cm, or they will burst open and lose their filling while boiling. Allergens: contains gluten (flour), egg.
