Made by pre-boiling lamb kidney and then pressure-cooking it briefly with tomato and spices, this stew is a practical offal dish from Uzbek home kitchens. The tomato sauce softens the richness of the kidney.

How to make it?

Pre-boil the kidney

Dice the kidney and pre-boil it in boiling water for 5 minutes, then drain; this reduces the sharp odour.

Prepare the sauce

Sauté the onion in olive oil until translucent, then add the crushed garlic and grated tomato.

Transfer to the pressure cooker

Add the pre-boiled kidney, tomato paste, cumin, chili flakes, salt, pepper and water, then close the pressure cooker lid.

Pressure-cook

15 min

Cook on low heat for 15 minutes from the moment it starts hissing, then let the steam release naturally.

Reminder

Do not skip pre-boiling the kidney before cooking, or a sharp odour will carry into the sauce. Always discard the pre-boiling water rather than reusing it in the dish.
