Prepare the spleen
10 minTrim the membrane from the spleen and cut it into large pieces.
This dish, made by boiling lamb spleen with bay leaf and whole peppercorns in a pressure cooker and finishing it with olive oil and lemon, is a plain, carbohydrate-free offal dish. It offers a practical protein source for those on a ketogenic diet.
Trim the membrane from the spleen and cut it into large pieces.
Place the spleen pieces, onion, bay leaf, peppercorns, salt and water in the pressure cooker and close the lid.
Cook on low heat for 70 minutes from the moment it starts hissing, then let the steam release naturally.
Slice the boiled spleen and drizzle with olive oil and lemon juice before serving.
Be sure to trim the outer membrane from the spleen, or it will toughen during cooking. Do not add salt to the boiling water too early, as it can make the meat tough.
