How to make it?

Prepare the spleen

Trim the membrane from the spleen and cut it into large pieces.

Load the pressure cooker

Place the spleen pieces, onion, bay leaf, peppercorns, salt and water in the pressure cooker and close the lid.

Pressure-cook

70 min

Cook on low heat for 70 minutes from the moment it starts hissing, then let the steam release naturally.

Serve

5 min

Slice the boiled spleen and drizzle with olive oil and lemon juice before serving.

Reminder

Be sure to trim the outer membrane from the spleen, or it will toughen during cooking. Do not add salt to the boiling water too early, as it can make the meat tough.
