Individual-portion cheese muffins made by mixing kaşar and white cheese into a savory cake batter and baking it in a muffin tin. This practical snack, suited to teatime, lunchboxes and guest treats, is loved for its soft texture.
Whisk together egg, milk, vegetable oil, and yogurt in a bowl.
Sift the flour with baking powder and salt into the wet mixture and fold in gently, mixing only until no lumps remain.
Gently fold grated kashar cheese, crumbled white cheese, and chopped dill into the batter.
Divide the batter among muffin tins, filling each two-thirds full. Bake in a preheated 180°C (356°F) oven for 25 minutes, until risen and golden on top. Check with a toothpick and serve.
Important: Mixing the dry and wet ingredients separately before combining them helps the muffins rise fluffier; don't overmix the batter. Note: Fill the molds two-thirds full — any more will overflow. Contains gluten (flour), egg, and dairy (cheese, milk).
A pinch of red pepper flakes or chopped olives added to the dough gives the muffins extra flavor. To check the muffins are done, a toothpick inserted in the center should come out clean.
