One of Portugal's most beloved desserts, this pudding bakes an egg custard over a layer of caramelised sugar in a bain-marie. A long chill afterwards is what lets it turn out of the mould in one piece.

How to make it?

Make the caramel

Caramelise half the sugar with the water on the stove for 8 minutes until deep amber, then pour it into the mould.

Make the custard

12 min

Whisk the eggs, remaining sugar and vanilla, gradually stir in the warmed milk, then strain the mixture over the caramel.

Bake in a bain-marie

45 min

Place the mould in a roasting tray filled with hot water and bake in an oven preheated to 170°C for 45 minutes, until the centre is just barely wobbly.

Cool and chill

240 min

Cool the pudding to room temperature, cover and chill in the fridge for at least 4 hours, then invert onto a plate.

Reminder

Chill for at least 4 hours before unmoulding, or it will lose its shape. Allergens: contains milk and dairy, and egg.

Kalıptan çıkarmadan önce tam 4 saat bekledim, dediği gibi şekli hiç bozulmadan düzgünce çıktı. Karamel de dibe yapışmadan tabağa güzelce aktı, misafirlerime servis ederken hiç sorun yaşamadım.

Fırınım biraz güçlü ısıtıyor, 45 dakika yerine 38 dakikada ortası titreşme noktasına geldi ve kenarları biraz fazla piştiği için sertleşti. Fırın gücüne göre süreyi 5-10 dakika erken kontrol etmenizi öneririm.
