A staple snack of Portuguese tables, pastéis de bacalhau is made by kneading soaked cod with mashed potato and shaping it into croquettes. Served as a starter at celebrations, these croquettes hold their flavour even when cold.

How to make it?

Prepare the cod

Boil the desalted cod and flake it apart.

Boil the potatoes

25 min

Boil the potatoes and mash them.

Knead the mixture

10 min

Mix the flaked cod, mashed potato, onion, parsley, eggs, flour and black pepper.

Shape the croquettes

15 min

Shape the mixture into small croquettes using two spoons.

Fry

8 min

Fry the croquettes in hot olive oil for 8 minutes until golden.

Reminder

Don't overwork the mixture; overworked dough causes the croquettes to fall apart while frying. Allergens: contains wheat (gluten), egg and fish.
