Queijadas, the famous mini tart from the town of Sintra, bake fresh cheese, egg and cinnamon inside a thin pastry shell. Baked in small tins, they come together in thirty to forty-five minutes and make an elegant partner for tea.

How to make it?

Make the dough

Rub the flour with the butter until sandy, add the cold water and salt to form a dough, wrap and chill.

Line the tins

Roll the dough thin and line mini tart tins, trimming off the excess edges.

Make the filling

8 min

Whisk the fresh cheese with the egg, sugar, flour and cinnamon until smooth.

Fill and bake

22 min

Divide the filling among the tins and bake in an oven preheated to 200°C until the tops turn deep golden.

Reminder

Skip the chilling step and the pastry shrinks away from the tin as it bakes, so don't rush that fridge rest. Allergens: contains wheat (gluten), dairy/butter and egg.

Mini tartların kabuğu tam istediğim gibi gevrek çıktı, iç harcı da fazla tatlı olmadı, çay saatine güzel eşlik etti.
