Put the salep powder and sugar in a pot and mix with a cup of cold milk to loosen it up. Dissolving the salep in cold milk first prevents clumping.
Add the remaining milk and cook over medium heat, stirring constantly, until it thickens to just below a simmer. The ideal consistency lightly coats the back of a spoon.
Pour the salep into cups, sprinkle with ground cinnamon on top and serve hot.
Important: Salep's texture comes from mixing the salep powder with cold milk first, then bringing it slowly to a boil — adding it directly to hot milk causes lumps. Contains dairy. Store-bought instant salep mixes may contain starch and flavoring; check the ingredient label.
Cooking the salep while stirring constantly prevents it from sticking to the bottom and forming lumps. If the consistency turns out thicker than you'd like, you can thin it out by adding a little hot milk.
