Salep powder is thickened with slowly simmered milk in this traditional treat, which takes patience and care to keep the salep from clumping. Enriched with whipped cream and needing no special equipment, it sets in the freezer.

How to make it?

Heat the milk

Heat most of the milk with the sugar in a pan until it starts to boil.

Add the salep

15 min

Mix the salep powder thoroughly with the remaining cold milk, then whisk it slowly into the boiling milk; keeping the salep from clumping takes real skill.

Thicken over low heat

20 min

Cook over low heat, stirring constantly, for 20 minutes until the mixture coats the back of a spoon.

Chill

30 min

Let the thickened mixture cool to room temperature, then cover with cling film and chill in the fridge for 30 more minutes.

Fold in the cream and freeze

45 min

Fold the separately whipped cream and vanilla into the cooled mixture, transfer to a lidded container and freeze for at least 45 minutes until firm.

Reminder

Adding the salep powder straight into the hot milk makes it clump easily; mixing it with cold milk first and then adding it gives a much smoother texture. It scoops more easily about 5 minutes after coming out of the freezer. Allergens: contains dairy.
