Sambousek, one of the beloved snacks of Lebanese cuisine, is made by filling thin dough with a mixture of white cheese and parsley, sealing it into a half-moon shape, and frying it. With its crispy outside and soft inside, it's a must-have for guest tables.
Knead the flour, warm water, olive oil, and salt into a smooth dough; cover it and let rest for 20 minutes.
Mix the crumbled white cheese, parsley, green onion, and dried mint to prepare the filling.
Roll out the dough thinly and cut into circles, place filling in the center, fold into a half-moon shape, and press the edges to seal.
Fry in hot oil until both sides are golden, then drain excess oil on paper towels.
Important: Moisten the edges with water and press firmly to seal, otherwise the cheese may leak out while frying. Caution: Make sure the oil isn't too hot, otherwise the outside will burn before the inside warms through. Allergen: contains wheat (gluten) and dairy products.
Adding a dessertspoon of vinegar to the dough gives a crispier result when frying.
