Thin dough sheets are filled with a spiced ground beef mixture, sealed into triangles and deep-fried until crisp. A regular feature on Saudi meze platters, sambusek is one of the classic dishes of hospitality.

How to make it?

Cook the Filling

Cook the onion in olive oil until translucent, add the ground beef and cook until it browns.

Season the Filling

Add the cumin, cinnamon, mixed spice and crushed garlic cloves to the browned beef and cook for 3 more minutes, then remove from the heat.

Cool the Filling

15 min

Spread the seasoned filling over a wide plate and let it cool at room temperature for 15 minutes.

Fill the Dough

20 min

Spoon the cooled filling into the centre of each dough wrapper, moisten the edges with egg and fold into a triangle.

Fry

5 min

Heat the frying oil over medium heat and fry the sambusek until golden on both sides, about 5 minutes.

Reminder

Watch that the frying oil is not too hot; overheated oil browns the outside fast while leaving the inside raw. Allergens: contains egg, gluten (pastry).

If you cannot find the ready-made spice blend, mix equal parts cumin, cinnamon and allspice for a very close homemade version.
