Marinate
15 minToss the liver and gizzard with the soy sauce, garlic, chilli and lemon juice, and marinate for 15 minutes.
Sate Ati Ampela is an Indonesian street food made by marinating chicken liver and gizzard in a sweet-savoury soy marinade, threading them onto skewers, and grilling over coals. It is a practical way to use up leftover offal, making it both economical and low-carb.
Toss the liver and gizzard with the soy sauce, garlic, chilli and lemon juice, and marinate for 15 minutes.
Thread the gizzard pieces onto separate skewers from the liver pieces.
Grill the gizzard skewers over the coals for 8 minutes, turning, then add the liver skewers and cook together for another 5 minutes.
Brush the remaining marinade over the skewers and serve hot.
Put the gizzard on the grill before the liver, since it takes longer to cook; if you start them together the liver dries out while the gizzard stays underdone. Allergens: contains soy.
