A favourite at Kazakh weddings and holiday tables, shek-shek fries tiny pieces of dough and binds them together with hot honey syrup, mounding the mixture into a dome on a serving plate. Frying hundreds of small pieces one batch at a time takes patience and plenty of time.

Wrap the dough and let it rest for 15 minutes.
Roll the dough thin, cut it into pieces the size of a small bean, and fry them in hot oil in batches until golden.
Melt the honey and sugar together over low heat and bring to a boil, then add the fried dough pieces and mix thoroughly.
Press the mixture with damp hands into a dome shape on a moistened plate, sprinkle with sesame seeds and let it cool and set for 20 minutes.
Keep the oil temperature steady while frying the dough pieces — oil that's too hot browns the outside fast while the inside stays raw. The mixture needs to still be hot when you add the honey syrup, or the pieces won't stick together once it cools. Allergens: contains wheat (gluten), egg, milk and dairy, sesame.
Replacing half the honey with grape molasses gives the dessert a darker colour and a less intense sweetness; add an extra spoon of sugar to bring the sweetness back.
