Made with wild strawberries, chia seeds, lemon and cinnamon, this jam thickens using only the chia seeds' natural gelling property, with no added sweetener. It's a practical solution for anyone after a diabetic-friendly breakfast spread.

How to make it?

Crush the fruit

15 min

Lightly crush the wild strawberries in a pot and simmer over low heat for 15 minutes.

Add the chia seeds

10 min

Add the lemon juice and chia seeds and simmer, stirring, for another 10 minutes; the chia seeds thicken the mixture without any added sweetener.

Let it rest

30 min

Remove from the heat and let it stand at room temperature for 30 minutes; the chia seeds soak up the liquid in this time and thicken it fully.

Reminder

Make sure the fruit juice is truly simmering before adding the chia seeds, or they won't gel properly. Don't skip the 30-minute rest — that's when the jam really thickens.

Chia tohumu bulamadığım için yerine psyllium kabuğu tozu kullandım, kıvam biraz daha jölemsi oldu ama yine de güzel yayıldı. 30 dakikalık dinlenmeyi 45 dakikaya çıkarmam gerekti, tam koyulaşması için.
