Sauté the vegetables

Sauté the onion, pepper, and garlic in olive oil until softened.

Add the tomatoes

Add the grated tomato, red pepper flakes, and cumin, and cook over low heat until the sauce thickens.

Crack in the eggs

Make small wells in the sauce and crack the eggs into them one by one, then sprinkle with salt.

Cover and cook

Cover the pan and cook over low heat until the egg whites are set and the yolks remain runny. Caution: cooking too long will set the yolks.

Sprinkle with chopped parsley and serve immediately with hot bread.

Reminder

Important: After cracking the eggs into the sauce, cover the pan and cook over low heat; the white should set while the yolk stays runny. If the sauce is too watery the eggs won't cook properly, so thicken it a little over low heat before covering. Allergen: contains egg.
