Coming from Turkey's grape-harvest tradition, this grape must sorbet is made by reducing grape must through simmering and then freezing and whipping it. Simple and naturally sweet, it's a dessert that comes together quickly for a crowded table.

How to make it?

Simmer the must

15 min

Simmer the grape must over medium heat for 15 minutes, skimming the foam.

Thicken it

10 min

Dissolve the cornstarch in a little cold must, add it to the pot, and simmer, stirring, for another 10 minutes until thickened.

Freeze

180 min

Pour the mixture into a wide container, once cool freeze it and stir with a fork every 30 minutes for 3 hours.

Whip and serve

5 min

Whip the frozen must with a fork until it reaches a flaky texture, then serve topped with walnuts.

Reminder

Stir the freezing must with a fork every 30 minutes, or large ice crystals will form and leave the texture grainy. Allergens: contains tree nuts (walnut).

Dondururken 30 dakikada bir çatalla karıştırmayı üç saat boyunca sürdürdüm, gerçekten büyük buz parçası oluşmadı. Cevizi servis anında serpince daha çıtır kaldı, herkes dokusunu beğendi.
